The U.S. Department of Agriculture Food Safety and Inspection Service (FSIS) has published a notice instructing inspectors on which young-chicken products are eligible for carcass sampling in its Salmonella and Campylobacter verification testing program.

All young chickens—including Cornish game hens, broilers, fryers and roasting chickens—are eligible, FSIS said. However, capons, hens, fowl, baking chickens, stewing chickens, cocks or roosters are not subject to Salmonella and Campylobacter verification testing.
